A Yorkshire Chef pin up

A local chef has won a national award and pride of place in the Brakes 2003 Calendar. Paul Owens, Sous Chef at Swinton Park, the 30 bedroom luxury castle hotel near Masham, is celebrating the news that his dish – a Blackcurrant Delice with Gooseberry Sherbet and Citrus Tuile – has been selected.

This is the fifth year that Brakes, the national catering suppliers, have held the competition for winning recipes which were chosen from over 100 high class entries. Paul has heard that he and his dish will feature in the June page of the calendar, which will be distributed to over 20,000 hotels, restaurants and pubs nationwide. A celebration dinner was held for the fortunate twelve at Raymond Blanc’s renowned Le Manoir Aux Quat Saisons with limousine transfer from a hotel in Oxford. Unfortunately Paul was away on holiday – so he enjoyed a trip of his own to St James’ Park to watch his team Newcastle FC play.

Rose Parks, Brakes’ Head of Food and Innovation and a member of the judging panel said “The standard of entries was truly fantastic and the judges had real trouble getting it down to the final twelve winners. It’s certainly a testament to the quality of chefs throughout the catering industry that the standard of competition was so high. We are confident that the forthcoming calendar will be one of our best ever”.

A previous calendar chef has recently won the title of World Junior Masterchef, so all eyes are now on Paul and his hopes for the future. Felicity Cunliffe-Lister, proprietor of Swinton Park, commented “ We are delighted for Paul, he is a great chef and this is a fantastic achievement”
