Chris Bax and Stephen Bulmer Half Day Course

We have so much delicious wild food growing around us, but few of us nowadays know how to spot it and make the most of it in our cooking.

This is a half day spring or autumn course which begins with a highly informative foraging session in the parkland with expert Chris Bax followed by the preparation of a gourmet meal by Stephen Bulmer in the Cookery School. Steve will create a selection of dishes featuring the ingredients foraged that day, which will be served informally around the demonstration table. Guests will receive a booklet of recipes to take home with them.

The Autumn course will focus on wild mushrooms, with Chris leading the class in a forage around the parkland, explaining how to identify fungi that are both delicious and safe to eat.  Steve will then demonstrate how to prepare and cook a gourmet mushroom feast in the cookery school.

Summer is here at last and I cant wait to get out there! The produce grown in the walled garden and the wild food foraged in the Parkland and Estate makes Swinton Park a really special place to learn to cook. We are taking full advantage of this with some great ‘outdoor’ courses – Barbecue Cookery, Kitchen Garden Cookery and Wild about Food - as well as our courses in the cookery school, making the most of wonderful summer ingredients.
