The Chef’s Table is an occasion of culinary theatre – limited to just 12 guests. Watch Cookery School chef director Stephen Bulmer prepare a gourmet menu in front of you, to be served at the demonstration table in the stylish but relaxed surroundings of the cookery school.

Steve has worked with top chefs at Michelin restaurants all over the world and ran the Raymond Blanc Cookery school at Le Manoir aux Quat’Saisons. As he cooks, he will entertain you with top tips and anecdotes from his career. Chef Table menus change for each event are based on different styles and themes of cooking such as French, Italian and Modern British, as well as Seasonal Dinner Parties.

What is unique about the Chef’s Table at Swinton Park is that Steve cooks just for the guests at the demonstration table, without the usual distractions found in a commercial kitchen. Guests at the table have his undivided attention and are able to converse freely with him throughout the evening, going home full of new tips and ideas.


ÂŁ55 per person, including a seasonal aperitif on arrival

Wine and other drinks charged separately.
Guests staying at the hotel on a DB&B basis can attend the Chef’s Table as an alternative to dinner in the restaurant.


Guest Chef Tables – New for 2015

As a treat for foodie guests, we have invited some of our Michelin-starred chef friends from around the UK to host Guest Chef Tables, showcasing their individual cuisine. Guest chef tables will take place in the relaxed, informal surroundings of the cookery school. Limited to just 12 guests, these evenings provide an opportunity for you to talk with the chef as you watch him at work, creating a signature dinner menu for you to enjoy.

Paul’s career has taken him to The French Laundry in Napa Valley, Le Manoir, Sat Bains and the BBC’s Great British Menu. His natural modern British cuisine focuses on purity of flavour, using wild and seasonal ingredients.

Our Saturday afternoon mini demonstrations will appeal to anyone wanting to sit back and enjoy watching a Michelin-trained chef cooking his signature dishes. Having worked at top restaurants all over the world, Steve has an array of skills and anecdotes to entertain you. Dishes demonstrated will vary according to the season. Includes glass of wine or tea/coffee.

Taste some wines to complement dinner and enjoy some of Cookery School chef director Stephen Bulmer’s delicious canapés to accompany them. These 45 minute pre-dinner demonstrations in the Cookery School offer some useful insights into Steve’s cooking and the ingredients he uses, perfect to whet the appetite before dinner in the restaurant.

For those who are looking for something really out of this world, join us for an alfresco supper at our charming, period Deerhouse in the parkland. Relax with a refreshing aperitif and watch Michelin-trained chef and Cookery School Director Stephen Bulmer prepare a delicious feast of barbecued meats, fish, salads and desserts, served buffet-style.

Tasting all the better for being outdoors with candlelight, a starlit sky and a blazing fire, sit back and enjoy an informal meal with views extending over the hotel and parkland to the distant Vale of York. What better way to relax and soak up the atmosphere of a dreamy English summer’s evening?

Dishes will typically include:
Asian-style Pork Belly, Pad Thai Salad
Lamb Kofte, Cous Cous with Spices, Seeds & Herbs, Mint Yoghurt
Grilled Chicken Paillard, Classic Caesar’s Salad
Grilled Masham Sausages
Grilled Halloumi Cheese (vegetarian)
Selection of Grilled Vegetables
These will be followed by a choice of desserts
The above dishes are representative of the dishes served at these events. However, Swinton Park reserve the right to change any or all of these dishes, as circumstances require.

Guests will all be seated together at a single, large table. Warm clothing and footwear highly recommended, as the evening turns cool after sunset. This is a rustic experience, with uneven ground surrounding the Deerhouse – please take care on arrival and departure. In the event of very bad weather the event will be cancelled.

The Kitchen Gossip

It’s lovely to see new season’s ingredients coming in, heralding the delights of the year to come. As well as Yorkshire rhubarb, the wild garlic is now in season and it wont be too long before new season’s lamb is available. 2014 has got off to a flying start with busy classes right across the schedule. Our Thursday Cookery Club Mornings and Supper Evenings have been very well received and our Barbecue Cook and Lunch courses get going over the Easter weekend.
