Stephen Bulmer Two Day Course
A two day “hands on” course that includes two
light lunches and a more formal dinner. Stephen will
also demonstrate additional skills and masterclass
sessions during the course. These courses provide
an opportunity to study a subject in depth, covering
a wider range of techniques than are possible in one
day. It also provides time to expand the repertoire
of dishes covered, including some dishes that require advance or two-stage preparation.
Day One: Arrive at 9:30 and cook throughout
the day, stopping for a light lunch served at the
demonstration table. There is a break for guests
to relax, enjoy the hotel facilities and change
for dinner from 3:30-7:00pm at which point
they return, help put the finishing touches to
the day’s work and then enjoy a formal dinner in
the Cookery School Dining Room. Partners are
welcome to join the course for this meal.
Day Two: The day starts again at 9:30am with
a day of cooking, a break for a light lunch at the
demonstration table, and the course comes to
an end at 3:30pm.

Stephen Bulmer One Day Course
A one day “hands on” course, ending with a late
lunch. Stephen will also demonstrate additional
skills and masterclass sessions during the course.
Expand your cookery repertoire with tried-andtested
chef’s recipes that will teach you new
techniques and professional tricks of the trade.
These classes are a mix of hands-on practical
and demonstrations, (for adults with some
cookery experience).
The day starts with coffee at 9:30am, before
the class begins at 10:00am. The course runs
throughout the day, with hands on cooking
interspersed with demonstrations from Stephen,
ending at approximately 3:30pm after a late
lunch served in the Cookery School Dining
Room. Partners are welcome to join the course
for this meal.

Stephen Bulmer Half Day Course
These courses run morning and afternoon, ending
either with a light lunch or afternoon tea served
at the demonstration table. The course content
is structured so that the sessions can be booked
individually, or together to create an extended
day course (with a short break in the middle for
guests to enjoy the hotel facilities). The course
combines hands on cooking with demonstrations.
The morning course starts at 10:00am, with a
two hour cooking session ending at 12:30pm
after a light lunch served at the demonstration
table. The afternoon course starts at 2:00pm,
with a two hour cooking session ending at
4:30pm after an afternoon tea served at the
demonstration table.

Stephen Bulmer Ultimate Sunday Lunch
These courses run on a Sunday morning and
are aimed at those who want to master the
essential skills required to serve the “Ultimate
Sunday Lunch” (including roasting and carving),
to enable family and friends to relax and enjoy
a Sunday together.
Those who want to spend
the morning enjoying the hotel’s activities
such as golf or falconry, spending time at the
hotel’s spa, or taking a walk in the grounds, are
very welcome to do so – they can then join the
cookery course for a leisurely Sunday Lunch
served in the Cookery School Dining Room.
These courses are particularly popular as a
“Mum’s Day Off” for Mothering Sunday and
Easter family day, allowing Mum time to relax
and unwind while the rest of the family put all
the hard work into getting lunch on the table.

Rosemary Shrager One Day Masterclass
Rosemary’s Day Course starts at 9:30am and ends at
approximately 3:30pm after a late lunch served
in the Cookery School Dining Room. Partners are
welcome to join the course for this meal.

Wild About Food with Chris Bax
The day starts either in the morning at 10:00am
with a two hour foraging session, a break for
coffee on return to the school and then a
demonstration lunch, or in the afternoon at
3:00pm, with a two hour foraging session, a
break for tea on return to the school and then a
demonstration supper.

Fending for Yourself at Uni

lunch and refreshments served during the day.

Chalet & Villa Food
The Two Day Course with Gilly runs over two days and starts at 9:30am and ends at 5:00pm,

after an afternoon tea. Both meals are served at
the demonstration table.

Children’s Cooking & Family Cookery
The Children’s Mini Chef courses run as an afternoon session, from 2.00pm – 5.00pm, ending with a
goody bag to take home. The Basics for Beginners and Confident Cook courses both run morning and
afternoon, either 10.00am – 1.30pm including lunch, or 3.00pm – 6.00pm including tea.
The Family Cookery course starts at 10:00am and ends at 3:00pm. During the day there

permitting), along with a light lunch and goody bag to take home.
All junior chefs will take home a recipe card and apron.
